"Fork and Knife Baked Chili Cheese Dogs

Ingredients

  • Skillet Hot Dog Chili:
  • 1 1 1 (8 count) package hot dogs
  • 1 1 1 (8 count) package hot dog buns
  • 2 2 2 cups hand-shredded sharp cheddar cheese
  • 2 2 2 tablespoons sweet or dill pickle cubes or relish, drained, optional
  • to and ketchup, to taste, optional
  • 1 1 ounce) can 1 (15 ounce) can no-bean chili or equivalent homemade (Wolf or Hormel recommended)
  • 1/2 1/2 1/2 cup chopped onion, optional
  • 1/2 1/2 1/2 tablespoon olive oil
  • 1/2 1/2 1/2 cup chopped onion
  • 1 1 1 pound ground beef
  • 1 1 pound) package 1 (1 pound) package hot dogs
  • 1 1 1 package hot dog buns
  • 2 2 2 tablespoons butter, melted
  • Garnishes: Extra onion, chopped pickles, or pickle relish, extra mustard, ketchup
  • Seasoning Blend:
  • 1/2 1/2 1/2 cup ketchup
  • 1/8 1/8 1/8 cup hot sauce
  • 2 2 2 tablespoons Creole mustard
  • 1 1 1 teaspoon Worcestershire sauce
  • 1 1 1 cup Coca Cola, root beer, Dr Pepper, or plain water
  • 1 1 1 teaspoon granulated sugar
  • 1/2 1/2 to teaspoon Cajun seasoning (like Slap Ya Mama), or to taste
  • 2 2 to teaspoons chili powder, or to taste
  • 1/4 1/4 1/4 teaspoon paprika
  • 1/2 1/2 1/2 teaspoon garlic powder
  • 1/4 1/4 1/4 teaspoon allspice
  • 1/4 1/4 1/4 teaspoon celery seed
  • to pinches kosher salt, or to taste
  • 1/2 1/2 to teaspoon freshly cracked black pepper, or to taste
  • Light grating whole nutmeg, optional

Skillet Hot Dog Chili:
Heat olive oil in a medium sized skillet and add onion; cook until softened but not browned. Add the ground beef and cooked until browned, breaking the meat up. Drain and set aside.
To the same skillet, add the ketchup, hot sauce, yellow mustard, and Worcestershire sauce; stir in cola, root beer, Dr Pepper or water and sugar and blend well. Add the Cajun seasoning, chili powder, paprika, garlic powder, allspice, celery seed, salt and pepper. Grate about 3 passes on the microplane of whole nutmeg into the sauce, if desired. Bring mixture up to a boil, add the meat, reduce and simmer for about 30 minutes on medium low.
Place a slice of cheese on the hot dog buns. Place hot dog in a bun, top with the hot dog sauce, and garnish as desired.


Preheat oven to 350 degrees F. Line a 9 x 13 inch baking pan with foil and place buns snugly in the pan, six long with two on the sides. Add a pinch of the cheese to each hot dog bun. Top with relish, mustard and ketchup, if using, and hot dogs. Spoon chili over hot dogs, top with remaining shredded cheese and sprinkle chopped onion on top. Cover tightly with foil, leaving a little head space so foil is not touching the cheese. Bake at 350 degrees F for 45 to 50 mins. Let rest for 5 to 10 minutes for easier serving.
