Wild Rice Casserole

Ingredients

  • 1 stick butter
  • 1 medium onion, chopped
  • 3 ribs diced celery
  • 1 can cream of mushroom soup
  • 1 small can diced mushrooms, drained
  • 1/2 pound Velveeta cheese
  • 1 box Uncle Ben's Wild and Long Grain Rice (don't use seasoning packet included)

Preparation

Step 1

Cook rice according to directions, omitting seasoning packet.

In skillet or heavy pan, cook onions and celery in butter until they are transparent. While hot, add soup, mushrooms and cheese, and stir until melted.

Combine rice and cheese sauce in greased casserole dish. Let stand an hour or so. Bake, covered, about 30 minutes in 350 degree oven until bubbly.
