Chicken: A better way to Roast

This is the best way to roast a chicken in my opinion. The chicken is tender and moist and the lemon slices are refreshing and delicious.

Ingredients
- 1 5/6 1 5/6 5/6 lb. roast chicken
- 1 1 1 whole lemon quartered
- 1 1 1 bunch of thyme
- 7 to 8 7 to 8 8 whole cloves of garlic
- kosher salt
- fresh ground pepper
- 2 2 2 large onions
Preparation
Step 1
Preheat oven 425*
Quarter two large onions and place in the center of a cast iron skillet. Add whole garlic cloves. Add all the lemon in the center and then place thyme on top of pile.
Remove back bone of chicken and then generously salt and pepper the chicken and place over the oven and garlic and thyme and lemon piled in the center of cast iron skillet. Place in the oven and cook for about 1 hour until the chicken breast reaches 165*. Remove from oven and do not cover with foil and let rest for about 20 minutes.
