  • FOR THE VINAIGRETTE, WHISK:
  • 2 2 2 Tbsp. olive oil
  • 1 1 1 Tbsp. each white wine vinegar and fresh lemon juice
  • 1 1 1 Tbsp. minced scallion whites
  • 1 1 1 tsp. each Dijon mustard and honey

  • FOR THE SALAD, TOSS:
  • 1 1 1 pkg. fresh baby spinach (5 oz.)
  • 1 1 1 cup quartered baby heirloom tomatoes
  • 1/2 1/2 1/2 cup purchased Asiago or Parmesan cheese crisps, or croutons
  • 1/4 1/4 1/4 cup minced scallion greens
