Ingredients

  • PINA COLADA SAUCE:
  • 2 boneless chicken breasts, pounded thin OR store-bought thin chicken breasts
  • 1 C bread crumbs
  • 1/2 C shredded coconut
  • 1/2 C flour
  • 1/2 C milk
  • 1/2 t salt
  • 1/2 t pepper
  • 1/2 tgarlic salt
  • 2 T butter
  • 2 T Olive Oil
  • 2 C Santa Barbara brand peach mango salsa
  • 1 container Yoplait brand pina colada yogurt
  • 2 T shredded coconut
  • 1/8 t coconut extract
  • 1 T canned crushed pineapple

Preparation

Step 1

Mix Panko bread crumbs, coconut and garlic salt on a paper plate.

Mix flour, salt and pepper on another paper plate.

Place milk in bowl. Dredge chicken breasts first in flour mixture, then milk, and finally in coconut/bread crumb mixture, completely coating chicken.

Melt butter in skillet with olive oil. Brown breaded chicken breasts in butter and olive oil, and cook until done.

Serve chicken breasts with Mango Peach Salsa on top and Pina Colada Sauce on the side.
