Ingredients
- 5C5 C small cauliflower florets
- 3T3 T EVOO
- 1T1 T chopped thyme
- 1t1 t lemon rind
- 1T1 T lemon juice
- 1 1/2t1 1/2 t chopped, drained capers
- 1t1 t Dijon mustard
- 1/2t1/2 t black pepper
- 1/4t1/4 t Kosher salt
Preparation
Step 1
Preheat broiler.
Combine cauliflower, 1 1/2 T oil, & thyme in large bowl.
Spread cauliflower mixture in single layer on foil-lined baking sheet. Broil 8-10 min. or until browned & tender, stirring once after 4 min.
Combine remaining EVOO, rind, juice, capers, mustard, pepper & salt in large bowl, stirring with whisk. Add roasted cauliflower; toss to coat & serve.
