Roasted Cauliflower with Lemon Caper Vinaigrette

Ingredients

  • 5 C 5 C small cauliflower florets
  • 3 T 3 T EVOO
  • 1 T 1 T chopped thyme
  • 1 t 1 t lemon rind
  • 1 T 1 T lemon juice
  • 1 1/2 t 1 1/2 t chopped, drained capers
  • 1 t 1 t Dijon mustard
  • 1/2 t 1/2 t black pepper
  • 1/4 t 1/4 t Kosher salt

Preparation

Step 1

Preheat broiler.
Combine cauliflower, 1 1/2 T oil, & thyme in large bowl.
Spread cauliflower mixture in single layer on foil-lined baking sheet. Broil 8-10 min. or until browned & tender, stirring once after 4 min.
Combine remaining EVOO, rind, juice, capers, mustard, pepper & salt in large bowl, stirring with whisk. Add roasted cauliflower; toss to coat & serve.
