Ingredients

  • Salmon - thick part cut into six ounce serving size
  • Ginger soy sold in supermarket near soy sauce.
  • 5 5 5 plum tomatoes - cored, chopped
  • 1 1 1 cucumber - sliced long way in half, seeds removed, then cut in strips then chopped
  • 4 4 4 scallions - white and a little of the green chopped
  • 2 dill 2 tablespoons
  • 1/4 1/4 1/4 cup balsamic
  • 2 oil 2 -3 tablespoons
  • 1 to 1 tsp and to taste

Preparation

Step 1

Put salmon pieces in plastic bag and add enough ginger soy to marinate
15 min min or as long as an hour
Mix together tomato, cucumber, scallions, dill
Kosher salt
Drizzle oil and balsamic and mix it up
Should be put together to sit out 30 min before serving and up to an hour before
Preheat oven to 550
Cover baking pan with aluminum foil
Put fish skin side down on foil
Roast 8 min
Serve salmon with tomato relish on top. Pass extra relish
