Love this simple and easy recipe for Dahal as written but feel free to adjust the spices and amount of vegetable stock to your preferred spice level and consistency. Serve with a dollop of Greek yoghurt and halved cherry tomatoes.

Ingredients

  • 2 2 2 cups red lentils
  • 8 8 8 8 to10 cups vegetable stock, dependent on desired consistency - I used 8
  • 1 1 1 tomato, chopped
  • 1 1 1 large onion, chopped
  • 2 2 2 orange/yellow peppers, chopped
  • 2 2 2 large carrots, chopped
  • 1 1 1 teaspoon cinnamon
  • 1 1 1 teaspoon garam masala
  • 1 1 1 teaspoon cumin
  • 1 1 1 teaspoon curry
  • 1/2 1/2 1/2 teaspoon cloves
  • 1 1 1 teaspoon dried parsley
  • 1 1 1 teaspoon each salt & pepper
  • 1 1 can 1 (8-ounce) can tomato paste

Preparation

Step 1

Throw all ingredients into Instant Pot, stir, and cook for 11 to 12 minutes on "legumes" setting.

Serve with a dollop of Greek yoghurt and halved cherry tomatoes.

Enjoy.

Note: May also be made on stovetop or in slow cooker.
