Lime-Scented Rice

Ingredients

  • 1 T olive oil
  • 1 T minced garlic
  • 1 T minced shallot.
  • 1 C white long grain rice
  • 1 t kosher salt
  • 1/4 ground pepper
  • 2 C water
  • 1 T lime zest
  • 2 T lime juice

Preparation

Step 1

In 3 qt. saucepan, heat 1 T olive oil, shallot & garlic over hi heat until lightly browned, @ 1 min.
Stir in rice, salt & pepper. Add 2 C of water & bring to boil.

Cover & reduce heat to low & cook until rice is tender & water absorbed, 15-20 min. Immediately fluff in lime zest & lime juice. Season with salt & pepper & serve.
