Ingredients

  • 1 1/4 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 pinch cinnamon
  • 1 pinch nutmeg
  • 1 1/2 cups plain yogurt
  • 1/4 cup honey
  • 1/4 cup melted butter
  • 1 egg
  • 1 cup raisins, optional

Preparation

Step 1

1. Preheat oven to 400 degrees F. Grease a 12-cup muffin pan.

2. In a bowl, combine whole wheat flour, all-purpose flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg; mix well. Make a well in the center.

3. In another bowl, whisk together yogurt, honey, butter, and egg. Pour into dry ingredients. Fold in raisins; stir just until moist and blended.

4. Spoon batter into prepared muffin pan. Bake for about 15 minutes.

Excellent. I added more cinnamon. The raisins were optional, so I opted to leave them out and instead add cinnamon chips, which went very nicely in these muffins!
