GNOCCHI WITH SAGE BUTTER

Ingredients

  • 1 package gnocchi
  • 12-16 sage leaves
  • 2 tbsp butter
  • 6-8 asparagus stalks
  • Shaved Parmesan cheese

Preparation

Step 1

Bring a large pan of salted water to the boil and poach gnocchi for 6 minutes and asparagus for 2-3 minutes (or until they float to the top of the water). Carefully life out of water with slotted spoon.

Heat butter in warm pan until it starts to foam, then add sage leaves. Roll gnocchi and asparagus quickly in the sage butter, then divide between 4 shallow bowls. Garnish with Parmesan shavings and serve immediately.
