Ingredients
- 6oz.6 oz. semi-sweet good quality chocolate
- 1stick1 stick (1/2 cup)unsalted butter
- 1cup1 cup confectioners sugar
- 3large3 large eggs, room temperature
- pinchpinch of salt
- 1/3cup1/3 cup all-purpose flour
- A bit of extra butter and some granulated sugar to coat the ramekins
- Additional confectioners sugar for dusting tops
Preparation
Step 1
Heat your oven to 400 degrees. Generously butter 4 small 6 oz ramekins then sprinkle with some granulated sugar and tap out excess then set aside.
In a large bowl add the butter and chocolate and put over a simmering pot of water. Stir gently to melt and make sure the butter and chocolate are fully incorporated and smooth.
Remove the bowl from the pot and add the sugar and mix until fully incorporated. Then add the eggs, one at a time, beating after each addition. Add the salt and flour and stir until just combined.
Pour the batter evenly into the 4 ramekins and bake for about 10-12 minutes, or just until the tops of the cakes are set – and soft and a bit jiggly.
Let cool on a wire rack for 5 minutes then turn the cakes onto serving plates and dust with confectioners sugar.
