    lb chopped lean turkey meat

    cup Italian flavored breadcrumbs

  • 1

    cup grated Locatelli Romano or Parmigiano cheese

  • 1

    egg lightly mixed

  • plenty of minced fresh parsley

  • salt & pepper


Mix all ingredients by hand while pot of basic marinara sauce simmers on stove. Here’s where different preferences come into play – if you like harder meatballs then add more breadcrumbs, if you like them soft then go for less and maybe crack in an additional egg. Wet hands with cool water and prepare meatballs to approx. size of golf balls. I usually get about 12 meatballs out of a package of meat. Drop one by one into very hot sauce trying to keep sauce at a low boil. Stir carefully with wooden spoon to keep from settling on the bottom and sticking to pot. Partially cover and simmer for approx. one hour checking often and wiping up splatter on stove. Enjoy!
