Cheesy Broccoli Chicken Rollups

A tasty and fun dish which 'hides' the broccoli from the kids.

Ingredients
- 2 2 2 cups broccoli, finely chopped (use a food processor if you can)
- 1 1 1 cup cheddar cheese, shredded
- 1 1 1 teaspoon garlic powder
- 1 1 1 teaspoon onion powder
- 1 1 package 1 (8-ounce) package cream cheese, softened
- 2 2 2 chicken breasts

- 2 to 3 2 to 3 3 cups cheese crackers (or panko)
- 1 1 1 cup all-purpose flour
- 2 2 2 eggs
Preparation
Step 1
Preheat oven to 325°F.
Microwave just over half the broccoli for about a minute. Then add cheddar cheese, onion powder and garlic powder. Mix thoroughly.
Butterfly the chicken breast. Then cover with plastic wrap and pound thin. Be careful not to break the chicken into pieces (silly helper kids!)
Remove plastic wrap and season generously with salt and pepper.
Place a scoop of the broccoli and cheese mixture on each piece and spread until the entire piece is covered.
Tightly roll the chicken starting with the smallest end. Secure with 2 toothpicks.
Crush the cheese crackers and mix in a bowl with the remaining broccoli (or simply put panko in a bowl) Set aside.
Put the flower in another bowl. Set aside.
Whisk the eggs in a 3rd bowl. Now we are ready to bread the rollups.
Place one roll in the flour and ensure it's covered. Shake off any excess. Then roll it in the eggs. Finally roll it in the crackers/panko. Place on a baking sheet lined with parchment.
Bake for 40 to 45 minutes.
Remember to remove the toothpicks, serve and enjoy!
