Ingredients
- 3 3 3 eggs
- salt and pepper
- vegetable oil
- boneless, skinless chicken breasts
- 1 1 1 tsp sesame oil
- 1 1 1 onion finely chopped
- 2 2 2 garlic cloves minced
- 4 4 4 c cold cooked rice
- soy sauce
Preparation
Step 1
beat eggs with a whisk, season with salt and pepper. Heat very little oil and make an omelette. Turn out onto a plate. Repeat with remaining egg. Fold and coarsely chop.
Toss chicken strips with sesame oil and season with salt and pepper. Heat 3 TBS veg oil over high heat in large frying pan and stir-fry the chicken until lightly golden, about 2-3 minutes. Add the onion and garlic and fry for 1-2 minutes or until onion is softened. Add 2 tbs more veg oil and when hot, stir in cooked rice tossing until very hot. Sprinkle with soy sauce and mix evenly. Remove from heat and stir in chopped egg.
