Thai Chicken and Kale Stir Fry

Ingredients

  • 1 package 1 package sweet kale vegetable salad kit
  • 2 tbs 2 tbs coconut oil
  • package package chicken tenders 1 to 1 1/2 pounds, diced
  • soy sauce
  • 1 inch 1 inch fresh ginger grated
  • 1/2 cup 1/2 cup sweet red chili sauce (like panda express)
  • green onions sliced
  • 1/2 1/2 red bell pepper thinly sliced
  • cashews or peanuts

Preparation

Step 1

marinate chicken in soy sauce for an hour

open kale salad kit, remove packaged salad dressing and set aside for another use. Open package of cranberries and pumpkin seeds and set aside.

Place a wok or very large stainless steel frying pan over high heat. add oil and saute peppers and green onions for a few minutes. remove and set aside

add chicken and grated ginger stirring constantly until chicken is cooked through about 2 minutes

stir in kale salad mix along with cranberries and pumpkin seeds and continue stirring until greens soften - about 5 minutes - add peppers and green onions back in pan

add sweet red chili sauce and heat through
add cashews or peanuts

serve over rice
