Sole or Flounder with crispy lemon-thyme bread crumbs

  • 2 2 2 tsp. olive oil
  • 1 1/2 1 1/2 1/2 tsp. unsalted butter
  • 1/2 1/2 1/2 cup whole-wheat panko bread crumbs
  • 1 1 1 tsp. chopped fresh thyme leaves
  • 1 1 1 tsp. finely grated lemon zest
  • 1 1 1 tsp. medium clove garlic, minced
  • kosher salt
  • 4 4 4 fillets sole or flounder
  • freshly ground black pepper

Preparation

Step 1

Heat oven to 400. combine oil and butter in a small skillet over medium heat. once the butter has melted, add the breadcrumbs, thyme, lemon zest and garlic. season lightly with salt and cook, stirring frequently, until the garlic is fragrant and crumbs are crisped and a darker shade of brown, 3-4 minutes.
Arrange the fillets on a parchment lined baking sheet. season lightly with salt and pepper; scatter the breadcrumb mixture on top of each one, pressing down slightly so it adheres. Bake on the middle rack, until the fish is just opaque and flakes easily with a fork--about 8 minutes.
