Ingredients
- 8 (6-7 inch) flour tortillas
- 3 boneless, skinless chicken breasts, cooked
- 1/2 cup barbecue sauce
- vegetable oil
- 1/2 cup green pepper, chopped
- 1/2 cup onion, chopped
- 4 oz. cheddar cheese, shredded

Preparation
Step 1
Preheat oven to 425. Slice chicken breasts into 1 inch thin strips. Place chicken in mixing bowl; add barbecue sauce; toss gently. Chop green pepper and onion. Place 4 tortillas on baking stone or sheet. Divide chicken mixture evenly over the 4 tortillas; top each with equal amounts of green pepper and onion, then cheese. Top each with another tortilla. Lightly spray each tortilla with vegetable oil. Bake 8-10 minutes or until tops are lightly browned. Cut into wedges.
Variations:
Use leftover roasted checken.
Saute pepper and onion first to soften and temper the taste.
Fold tortillas in half and cook in a panini press.
