"Easy Pork Ramen Soup

Easy Pork Ramen Soup is a quick, homemade version of a classic Ramen soup recipe. 30-minutes from start to finish and it's filled with noodles, broth, and pulled pork making a delicious soup to enjoy at home.
Ingredients
- Ramen Broth:
- 1 tsp sesame oil Or oil of choice
- 2 tsp grated ginger
- 3 cloves grated garlic
- 1 tsp miso paste *Or anything to add depth of flavor, I use Trader Joe's Umami Paste
- 1 tsp chili garlic paste or sriracha
- 4 cups low sodium chicken broth *or low sodium broth of choice
- 1 cup water
- 2-3 tbsp low sodium soy sauce
- 1.5 tsp rice vinegar
- 1 tsp kosher salt Start with 1/2 tsp and add to taste
- 1 cup mushrooms, sliced I used button mushrooms, but you could also use shiitake mushrooms
- Optional toppings or add-ins:
- 1 cup shredded pulled pork
- 1 cup chopped kale or greens
- 1/4 cup chopped scallions
- 1/2 cup shredded carrots
- 1-2 soft-boiled egg
- 1 radish, sliced
- 1 sheet nori or seaweed
Preparation

INSTRUCTIONS
In a stock pot warm sesame oil over medium heat.
Add ginger and garlic, sauteing until fragrant. (about 1 minute)
Add miso paste or umami paste and chili garlic sauce, stirring until mixed with the spices.
Add broth, water, low sodium soy sauce, rice vinegar and 1/2 tsp salt, stirring to combine.
Bring the broth to a simmer, add mushrooms and allow to simmer until the mushrooms are softened.
Taste and adjust seasoning, add sriracha, more soy sauce or vinegar until you've reached a desired flavor.
Add chopped kale on top of soup and cover for 1-2 minutes allowing the greens to steam.
Meanwhile, boil noodles according to package directions and drain.
Prepare egg(s) if you're using them as a topping. I bring the water to a boil then slowly place egg in, with a spoon. Boil for 6 minutes (soft-boiled) to 8 minutes (hard-boiled)
Pour 1/4 broth over 1/4 of the noodles and top with pulled pork, scallions, shredded carrots, sliced nori and egg. Serve immediately.
RECIPE NOTES
*Umami paste is not required, but highly recommended. Umami adds a depth of flavor that really enhances the broth. You can usually find it in health food stores, in the refrigerated section. I used Trader Joe's umami paste in this recipe.
*Nori is seaweed commonly used in sushi. You can omit completely or add any seaweed you like or have at home.
*All add-ins are suggestions, choose any or all for your Ramen soup.
