Potato Pancakes

  • 2 1/2 lbs potatoes, russets are best
  • 1 cup flour
  • 2 eggs
  • salt and pepper, to taste
  • 2 Tbsp chopped chives
  • oil or shortening



Step 1

Peel the potatoes and grate or grind very fine, into large bowl. Add the flour and eggs and blend well. Season to taste with salt and pepper and add chives.

Heat grill or large skillet and grease generously. Drop pancake mixture by heaping tablespoon on the grill, flattening out to form pancakes. Fry until golden on both sides, adding oil as needed
