Ingredients

- 2 strips thick-sliced bacon, diced
- 1 pound red-skinned potatoes, cubed
- Stir in:
- 1/3 cup heavy cream
- 3 tablespoons unsalted butter
- 1 tablespoon chopped chives
- Salt and pepper to taste

Cook bacon until crisp; transfer to a paper-towel lined plate.
Cook potatoes in a pot of boiling salted water until fork-tender; drain and return to pot. Cook potatoes over medium heat, stirring to remove excess moisture, 1 minute.
Stir in cream and butter, crushing potatoes with a potato masher until they reach desired consistency. Stir chives and bacon into potatoes; season with salt and pepper.
