Pig Pickin' Cake

In the South, a pig pickin' is a term for a pig roast. This fruity, light dessert is perfect with bar-b-que!

Ingredients

  • TOPPING:
  • 1 box yellow cake mix
  • 1 stick unsalted butter, softened
  • 1 14 ounce can mandarin oranges, drained. Reserve 1/2 cup juice.
  • 4 large eggs
  • 1 teaspoon vanilla
  • 1 small box vanilla instant pudding
  • 1 20 ounce can crushed pineapple, juice reserved
  • 1/2 cup powdered sugar
  • 4 ounces Cool Whip

Preparation

Step 1

Preheat over to 350 degrees. Spray a 9 x 13 baking dish with cooking spray.

For the cake, combine the cake mix, butter, 1/2 cup juice from oranges, eggs, and vanilla. Beat for 3-4 minutes on medium high.

Add drained oranges and stir until combined. Pour batter into prepared dish and bake for 20 - 25 minutes.Remove from oven and cool completely.

Blend juice from pineapple with the vanilla pudding mix. Stir in powdered sugar, then mix in whipped topping.

Finally, stir in drained pineapple. Spread frosting on cooled cake. Top with additional mandarin oranges if desired.

Cake needs to be kept refrigerated.
