GERMAN CHOCOLATE COCONUT FROSTING

Ingredients

  • 3/4 cup butter
  • 1 can evaporated milk (12 oz can)
  • 1 1/4 cups light brown sugar
  • 4 extra large egg yolks
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 2 cups sweetened coconut
  • 1 cup toasted, blanched, sliced almonds
  • 1 cup chopped pecans
  • 1/4 tsp salt

Preparation

Step 1

Toast almonds at 375 for 5 minutes.

Melt butter. Add milk, sugar and yolks and bring to simmer. Simmer, stirring with wooden spoon for about 15 minutes till slightly thickened. If it curdles ... beat vigorously with whisk. Off the heat, stir in vanilla and almond extract and remainder of ingredients. Allow to cool for 1 hour. Frost with metal spatula.
