RAISIN & SPICE BREAD

This is great spread with a little cream cheese. It's a very moist bread. Keeps well. The aroma from the baking bread screams HOLIDAY!

Ingredients

  • 1 1/2 cups raisins
  • 1 1/2 cups water
  • 1 Tsp baking soda
  • 4 Tbls butter
  • 1 cup packed brown sugar
  • 2 cups flour
  • 1 1/2 Tsp cinnamon
  • 1/2 Tsp allspice
  • 1/2 Tsp cloves
  • 1 Egg
  • 1 Tsp baking powder

Preparation

Step 1

Put raisins & water in saucepan. Bring to boil and simmer 10 minutes.

Remove from heat and add baking soda. Then add butter and brown sugar stir until butter melts and set aside for 10 minutes.

Combine flour, baking powder and spices in a bowl. Break egg into small bowl and beat. Stir egg into cooled raisin mix and then add flour & spices.

Pour into greased loaf pan and bake 350° 45 to 60 minutes.

Substitute rum for the water.
