Lentil Soup Borracho

Ingredients

  • 1 lb lentils, rinsed
  • 4 cups beer
  • 3 cups chicken broth
  • 1 lb lean ground beef
  • 1 cup cooked ham pieces
  • 1 lb smoked sausage or kielbasa, thinly sliced
  • 1 cup coarsely chopped celery
  • 1 cup chopped red onion
  • 1 tsp chopped garlic
  • 1/2 tsp rosemary
  • 1/2 tsp basil
  • 1 cup sliced mushrooms
  • salt and pepper to taste

Preparation

Step 1

1. Combine the lentils, beer and broth in a large kettle or Dutch oven. Bring to boil, reduce heat and simmer.

2. Brown ground beef in skillet. Drain off fat.

3. Add beet with ham, sausage, celery, onion, garlic, rosemary, basil and mushrooms to kettle and cook 1 hour, or until tender. Season to taste with salt and pepper.
