French Cheesy Mashed Potatoes

Ingredients

  • 1 lb Yukon gold potatoes, peeled and quartered (eighths if large)
  • 4 Tbl butter
  • 3/4 C heavy cream
  • 1/2 lb Gruyere cheese

Preparation

Step 1

Simmer potatoes in a large saucepan with water to cover, until very tender when pierced with a fork, 15 to 20 minutes.

Meanwhile, heat butter and heavy cream; keep hot. Grate Gruyere cheese; set aside.

Drain potatoes and dry the saucepan. Rice the potatoes into the pan. Over low heat, stir potatoes in pot to remove excess moisture.

Add milk and cheese in three batches, stirring vigorously until incorporated before adding the next batch. Season with salt and serve immediately.
