James Beard's Mocha Parfait

Ingredients

  • 1/2 c sugar
  • 1/2 c water
  • 1 T instant coffee
  • 6 oz chocolate chips
  • 2 T creme de cocoa
  • 2 eggs
  • 1 1/2 c heavy whipping cream

Preparation

Step 1

Combine first 3 ingredients in saucepan. Bring to a foil. Boil 3 minutes. Put chocolate chips in blender. Add hot mixture to chocolate chips. Blend 6 seconds. Add crème de cocoa. Blend 6 seconds. Add eggs and blend 1 minute. Whip cream and fold together with chocolate mixture. Pour into parfait glasses.
