Pizza Quiche

Ingredients

  • 8 oz thinly sliced pepperoni
  • 1 9-inch unbaked pastry shell
  • 2/3 cup shredded swiss cheese
  • 1/2 cup sliced black olives
  • 1 cup chopped green pepper
  • 3 eggs
  • 2 Tbsp flour
  • 1 cup milk
  • grated parmesan cheese
  • 1 8oz can tomato sauce with mushrooms
  • 1/2 tsp salt
  • 1/4 tsp basil
  • 1/4 tsp oregano
  • 6 thin rings green pepper

Preparation

Step 1

Preheat oven to 400 degrees F

1. Saute pepperoni, covered, 2-3 minutes, or until warmed through. Set aside

2. Bake pastry shell at 400 degrees for 5 minutes Remove from oven and sprinkle 1/3 cup swiss cheese over bottom evenly. Sprinkle on half the pepperoni and top with olives, chopped green pepper, remaining swiss cheese and rest of pepperoni.

3. Beat eggs and flour until smooth. Blend in milk, 1/4 cup grated parmesan cheese, tomato sauce, salt, basil, and oregano. Pour into pastry shell. Sprinkle with 2 Tbsp grated parmesan cheese and top with green pepper rings. Bake at 400 degrees for 15 minutes. Reduce the heat to 325 degrees F and bake about 40-45 minutes longer, or until knife inserted near center comes out clean. Let stand 10 minutes and serve
