  • 3 Cloves of Garlic (or more!)
  • Chili Flakes
  • 1 can Cannelloni Beans
  • Cherry Tomatoes
  • Fresh Basil
  • Rosemary (fresh or dried)
  • Mozzarella
  • Olive Oil
  • Salt
  • Pepper

Preparation

Step 1

Fill a small baking dish with 8-12 cherry tomatoes. Toss with rosemary, salt, pepper, and olive oil. Roast in the oven at 400 degrees for about 10 minutes.

Preheat a saucepan with olive oil. When the oil is hot, add the garlic and chili flakes to taste. When they have flavored the oil, but before the garlic browns, add one can of cannelloni beans. Allow to crisp on both sides of beans. Lightly salt and pepper.

Place the beans on one side of the plate, and the tomatoes on the other. Over the top, place fresh sliced mozzarella. Chiffonade basil and add plentifully as garnish. Garnish with a dash of olive oil and a sprinkle of good salt.
