Au Gratin of Leeks

Ingredients

  • 12 medium to large leeks (about 3 lbs), green parts trimmed off, rinsed thoroughly and sliced thin.
  • (can add some shallots, vidalia etc)
  • 2 c mascarpone
  • 1 t just – grated nutmeg
  • 1 t fresh pepper
  • 1 1/2 t fine sea salt
  • 1/2 c vodka
  • 2/3 c grated parmesan
  • 1 T unsalted butter

Preparation

Step 1

Put prepared leeks into large bowl. In smaller bowl combine ingredients except cheese and butter. Mix well. Put into bowl with leeks and using 2 forks, evenly coat the leeks with mixture. Spoon into buttered 12"x 14" oval. Bake at 400 for 30 min.
