Ingredients
- 3 T lemon juice
- 2 T olive oil
- 1/2 t salt
- 1 15 oz. can black beans, rinsed and drained
- 1 c fresh corn kernels (2 ears) cooked or grilled
- 1-2 plum tomatoes, chopped
- 1 scallion, minced
- 2 T fresh parsley, minced
- dash of hot sauce to taste

Whisk together first 3 ingredients. Add remaining ingredients.
