Potato Gnocchi with Zucchini and Gorgonzola

Ingredients

  • 2 T olive oil
  • 2 shallots, diced
  • 1 lb zucchini, thinly sliced
  • salt
  • 1/2 c chicken stock
  • 9 oz gorgonzola cheese
  • ground pepper

Preparation

Step 1

Warm oil and add shallots and zucchini. Cook 5 minutes. Season with salt and add stock; simmer 5 minutes. Add cheese, allow to melt, then add pasta and toss.
