Fall Greens with French Vinaigrette

Ingredients

  • 2 T champagne or white wine vinegar
  • 2 T Dijon mustard
  • Salt and freshly ground pepper to taste
  • 6 T olive oil
  • 5 oz mixed fall lettuces
  • 6 oz blue cheese, crumbled
  • 1/2 c walnuts, toasted
  • 1/2 c dried cherries

Preparation

Step 1

In a small bowl combine vinegar, mustard, salt and pepper and whisk to blend. Add oil slowly and whisk constantly until smooth and blended. Adjust seasonings. Toss lettuces and 2/3 of vinaigrette. Add more if needed. Divide among 4 plates. Top with cheese, walnuts and cherries.
