Ingredients
- 1 green pumpkin
- Salted (pickled pork
- 3 SMALL bird (jalapeno) peppers
- thyme
- Black pepper
- Canned milk
- Cinnamon (optional)
Preparation
Step 1
Peel and core pumpkin. Cook all ingredients in pressure cooker, pork included for about 10 mins. Reserve liquid. Puree cooked pumpkin in food processor or blender or use mixer. Return to liquid and bring to a boil. Add evap. milk (about 1 can) to taste and desired consistency.
This soup is a thick one so don't use too much milk. You might also try serving it cold sometimes - we like it warm best.
Also, you can top with toasted pumpkin seeds.
