  • 2 pound chicken thighs
  • 2 cup barbecue sauce

Step 1

In a slow cooker, add the chicken thighs and cover with 1/2 cup of barbecue
sauce,

Put the lid on the slow cooker and cook on high for 2-1/2 - 3 hours.

When the chicken is tender remove the slow cooker lid and use tongs or a
slotted spoon to transfer the chicken thighs to a medium sized bowl to
cool, about 5 - 10 minutes. Discard cooking liquid from the cooker and
place on warm.

Once cool enough to handle, add 1-1/2 cups barbecue sauce and shred the
chicken thighs while mixing with the sauce. Place sauced chicken back into
the slow cooker to keep warm until serving. Stir occasionally to keep the
bottom from scorching.
