Aunt Beth's Apple Dapple Cake

Ingredients

  • Glaze:
  • 2 c sugar
  • 1 1/2 veg. oil
  • 3 eggs
  • 3 c flour
  • 1 T baking soda
  • 1 t salt
  • 3 c finely diced apples
  • 2 c chopped pecans (optional)
  • 2 t vanilla
  • 1 cup dark brown sugar
  • 1/4 lb butter
  • 1/2 cup heavy cream

Preparation

Step 1

Preheat oven to 325. Beat together sugar and oil, then add eggs one at a time. Combine flour, soda, salt and stir in egg mixture. Beat in apples, nuts and vanilla. Put into buttered spring form or angel cake pan. Bake 1 hr.
Glaze: Boil ingredients for 3 minutes. Reserve 1/3 c glaze. Pour the rest over cake while in pan. Cool and remove from pan. Serve each piece with more glaze.
