Potato Dumplings - Halusky

Ingredients
- 2 medium potatoes
- 1 egg
- 1 tsp. salt
- 2 cups flour
- Serve with cottage cheese or cabbage.
Preparation
Step 1
Grate potatoes, add salt, egg and flour. Mix well. If dough is too stiff add a little water (1/4 cup - more or less). Drop small portions from tip of spoon into boiling water. Cook for 7 to 10 minutes.
Drain. Rinse with cold water. Serve with cottage cheese or cabbage.
Cottage cheese is prepared by browning 1/4 cup butter and pouring over the dumplings.
Crumble dry cottage cheese over the buttered dumplings and add salt. Mix well together and serve.
Cabbage is prepared by chopping one small onion, browned fat; add finely chopped head of cabbage with seasoning of salt and paprika. Fry slowly covered until done - about 20 minutes. Add dumplings and mix well. Serve hot.
