Roast Sweet Potatoes

  • 4 small sweet potatoes
  • olive oil
  • salt
  • pepper

Preparation

Step 1

Preheat oven to 425 degrees.

Clean potatoes, slice each in half. Rub each half with olive oil, season each side with salt and pepper.

Place on parchment lined baking sheet. Roast until tender when pierced with fork, 18-22 minutes.
