  • 3 cloves minced garlic
  • 1/3 cup olive oil
  • 1/4 cup tomato sauce
  • 2 tablespoons of red wine vinegar
  • 2 tablespoons chopped fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 pounds peeled and deveined fresh shrimp. I used a cooked shrimp in the freezer section medium peeled, deveined tail on..

Preparation

Step 1

Mix the garlic, olive oil, tomato sauce and red wine vinegar together in a large bowl. Season with basil, salt and cayenne pepper, mix in the shrimp until well coated. ( I thawed my shrimp, and dried it off really well with paper towels before adding it to the marinade. Also, pulled the tails off ) Refrigerate covered for 30 - 60 minutes stirring once or twice. Thread the shrimp onto skewers, piercing once near the tail and once near the head and discard the marinade. Preheat the grill on medium heat and spray with some oil. Cook the shrimp for 2 - 3 minutes per side and serve immediately.

Note: First time made this, I used my in door counter top grill. with skewers. I think it will be just as good, in air fryer or skillet with out skewers..
