Ingredients
- 1/2 lb. lean ground beef
- 1 lg. egg, slightly beaten
- 2 Tbsp. fine dry bread crumbs
- 1 Tbsp. grated Parmesan cheese, plus more for serving
- 1/2 tsp. dried basil leaves
- 1/2 tsp. onion powder
- 1 46 ounce can chicken broth
- 2 cups spinach (or escarole)
- 1/2 cup orzo, uncooked
- 1/3 cup finely chopped carrot
Preparation
Step 1
In medium bowl, combine beef, egg, bread crumbs, Parmesan, basil and onion powder. shape into 3/4 " balls.
In large saucepan, heat broth to boiling. stir in meatballs, spinach (or escarole)orzo, and carrot. reduce heat to medium. cook at a slow boil 10 minutes or until pasta is tender, stirring frequently. serve sprinkled with cheese.
