- cup mayonnaise

- cups plain yogurt
- 1/2 1/2
- cup fresh basil leaves

- cups cubed deli rotisserie chicken (from 2- to 3-lb chicken) SAVE $

- cup cubed cooked peeled potatoes
- 1 1
- red bell pepper, chopped
- 1 1
- green bell pepper, chopped
- 1 1
- yellow bell pepper, chopped
- 1/2 1/2
- cup Greek olives, pitted
- 1/4 1/4
- cup capers, rinsed
- 1/4 1/4
- cup chopped red onion
- Salt and pepper to taste
- Mixed salad greens, if desired

In food processor, place mayonnaise, 1/2 cup of the yogurt and the basil. Cover; process until pureed. Add lemon juice. Cover; process just until blended. Transfer mixture to large bowl.

Add remaining 1 cup yogurt; mix well. Fold in chicken, potatoes, bell peppers, olives, capers and onion; season with salt and pepper.

Cover; refrigerate 3 hours. Serve salad on mixed greens.
