Danish Bar Apple- Mom's recipt

great memories - this was made for special occasions, usually in the fall when apples were at their best

Ingredients

  • 2 1/2 c flour
  • 1 tsp salt
  • 1 cup shortening
  • 2 eggs
  • 1/2 c milk (less when eggs added)
  • 1 cup crushed cornflakes
  • 7 large apples (peeled and sliced)
  • 1 cup sugar
  • 1 tsp cinnamon
  • 1 cup icing sugar
  • 1 tbsp water
  • 1/2 tsp vanilla

Preparation

Step 1

Combine flour, salt and shortening using pastry cutter until it resembles course cornmeal. Combine 2 egg yolks, slightly beaten and enough milk to make 1/2 cup. Slowly add to dry ingredients until mixture is slightly sticky. Divide in half. Roll each piece of dough into a 12 x 17 rectangle. Place first rectangle on greased sheet. Sprinkle cornflakes evening over pastry - leave a 1/2 inch of pastry along each edge. Peel and slice 7 large apples. Combine 1 cup of sugar and 1 tsp cinnamon, then sprinkle over apples and mix to combine. Spread apples evenly over pastry leaving 1/2 inch of pastry around all sides. Moisten 1/2 inch edge of pastry with milk and add 2nd 11 x 17 inch pastry rectangle over top. Pinch top and bottom all around to seal. Beat 2 egg whites until stiff peaks form. Brush evenly over top crust. Bake at 400 for 1 hour.

Combine 1 cup icing sugar with 1 tbsp water and 1/2 tsp vanilla. When bar is cooked and as soon as it comes out of the oven, drizzle sugar mixture over.
