Chicken Tortilla Soup

Ingredients

  • 2 cans (16 oz) Pinto Beans
  • 2 lbs Chicken, cooked and shredded
  • 1 can (15 oz) whole tomatoes, mashed and undrained
  • 1 can (10 oz) enchilada sauce
  • 1 medium onion, chopped
  • 1 can (4 oz) green chilies, diced
  • 2 cloves of garlic, chopped
  • 8 cups chicken broth
  • 1 Pkg. (1.25 oz) original Taco Seasoning
  • 1 Pkg. (10 oz) frozen corn
  • Tortilla Chips

Preparation

Step 1

1. Combine all ingredients except tortilla chips in a large stock pot.

2. Bring to a boil. Reduce heat to medium-low and simmer for 39 minutes or until onions are translucent & flavor blended.

3. Serve with Tortilla chips.
