Ingredients
- 4 boneless and skinless chicken breasts
- 1/2 cup flour
- salt and pepper to taste
- dried oregano to taste
- 4 T oil
- 4 T butter
- 2 cups fresh mushrooms, sliced
- 1 cup Marsala wine
Preparation
Step 1
Pound chicken breasts between sheets of plastic wrap to 1/4" thick
Combine the flour, salt, pepper, and oregano in a mixing bowl.
Dredge the chicken pieces in the flour, shaking off any excess
Heat oil and butter in a skillet over medium heat
Cook chicken breasts on med heat for about 2 minutes on the first side until lightly browned.
Turn breasts over and cook the other side
Add mushrooms to the skillet
Cook chicken about 2 more minutes until both sides are lightly browned.
Continue to stir the mushrooms.
Add the wine around the chicken
Cover and simmer for about 15 minutes
Serve with cooked pasta
