Scallops - Grilled with Parsley

Ingredients

  • 20 scallops
  • 4 tbsp lemon juice
  • 4 tbsp oil
  • 1 tsp mustard
  • 4 tbsp white wine vinegar
  • 10 tbsp olive oil
  • 1 tsp sugar
  • 1 bunch parsley
  • salt & ground pepper (to taste)

Preparation

Step 1

Sprinkle scallops with lemon juice and season lightly with salt & pepper.
Wash & dry parsley & finely chop leaves. Reserve a few sprigs for garnish.
Mix mustard, vinegar, salt, pepper and sugar. Stir in olive oil (check the seasoning) and then add the parsley.
Heat 4 tbsp of oil in a pan and fry scallops for 1-2 minutes per side.
In a bowl, toss scallops until coated with parsley sauce.
Serve with parsley garnish
