Bacon Mac N' Cheese Sweet Potato Skins

Ingredients

  • 6 medium potatoes
  • 10 bacon slices
  • 10-1/2 oz. uncooked macaroni (about 6 cups cooked)
  • 2 T unsalted butter
  • 2 T flour
  • 2 c whole milk
  • 1 T hot sauce
  • 1/2 t kosher salt
  • 1/4 t pepper
  • 12 oz. shredded cheddar cheese (about 3 cups), divided
  • 1/3 c sliced scallions

Preparation

Step 1

Preheat oven to 400. Place potatoes on baking sheet with foil lining until tender, about 45 minutes. Let stand until cool enough to handle, about 30 minutes.
While potatoes cool, cook bacon in large skillet until crisp, 10-12 minutes. Drain. Chop and set aside.
Cook pasta according to package directions and drain.
Melt butter in saucepan over medium. Add flour and cook, whisking constantly until lightly golden, about 1 minute. Gradually whisk in milk and cook, whisking constantly until it thickens, about 5 minutes. Remove and whisk in hot sauce, salt, pepper and 2 cups of cheese until cheese is melted and smooth. Add pasta and coat.
Cut potatoes in half lengthwise and scoop out centers, leaving 1/4" shell. Reserve centers for another use. Divide pasta mixture among shells, sprinkle with bacon and remaining cheese. Return to baking sheet and heat at 400 until golden brown, about 10 minutes. Sprinkle with scallions.
