  • 1/4 c finely chopped red onion
  • 1 tsp curry powder
  • 1 tsp ground cumin
  • 3 c Israeli (pearl) couscous
  • 1 lg orange
  • 1/2 c plain low-fat yogurt
  • 3 tbsp olive oil
  • salt and pepper
  • 3/4 c petted dates
  • 1 med. bulb fennel
  • 1/2 c packed fresh flat-leaf parsley



Step 1

1.In 4-qt. saucepan , heat curry and cumin medium for 2 minutes or until fragrant. Transfer to large bowl.In the same saucepan, add couscous. Cook 5 minutes or until toasted, stirring. Add 8 cups of water; heat to boiling. Reduce heat to medium; cook 4 to 5 minutes or until just tender, stirring occasionally.Drain; rinse until cool. drain again.

2.Meanwhile, from orange, finely grate 1/2 tsp peel and squeeze 1/4 c juice into bowl with spices. Whisk in yogurt, olive oil, and 1/2 tsp each salt and pepper until blended.Chop dates and fennel;finely chop parsley.

3. Add onion to the bowl along with dates,fennel, parsley, couscous, and 1/2 tsp salt. Stir until well coated.
