King Ranch Chicken

Ingredients

  • 1 3-4 lb chicken fryer or 4 whole larger chicken breasts
  • 1 package corn tortillas
  • 1 chopped onion
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon pepper
  • 1 can cream of chicken soup
  • 1 10 oz package sharp cheddar cheese
  • 1 10oz can hotel tomatoe with green chilies

Preparation

Step 1

boil chicken
remove meat from bones and cut into bites size pieces
reserve stock
dip tortilla in boiling chicken stock until limp
line bottom of lightly greased (no stick) 9X13 inch casserole dish with tortilla and layer in the following order
chicken, onions, seasonings, chicken soup and cheese
just before baking, top with 1/2 can tomatoes, or use the whole can for a hotter flavor
bake at 350* uncovered for 45 minutes
