Kalmata Olive Bread

Ingredients

  • all purpose flour 4 C
  • warm water 1/2 C
  • white sugar 1 T
  • yeast 1 T
  • salt 1 T
  • warm water 3/4 C
  • olive oil 3 T
  • garlic 5 cloves
  • kalamata olives 1/2 C
  • cornmeal 1 T

Preparation

Step 1

in large measuring cup dissolve sugar in 1/2 C warm water
put the measuring cup in a sink of hot water for 10 min to proof the yeast
heat oven to 105
heat glass bowl in the oven
in another large bowl mix flour, salt
add proofed yeast & another 3/4 C warm water & olive oil
mix until dough clings to the sides
if too wet add flour if too dry add a little water
transfer dough to heated bowl and cover
let rise for 30 min in warm oven
in small bowl mix minced garlic & pitted kalmata olives
once dough has risen transfer to lightly floured surface
mix in olives
knead 5 minutes
form dough into a log or loaf shape
grease glass bowl & sprinkle with cornmeal
preheat oven to 150 then turn off
let dough rise in warm oven for 30 more minutes
remove dough
preheat oven to 350
transfer loaf to cookie sheet
cook for 30 min
