Ingredients
- 1 3/4 cups gluten free flour blend
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup brown sugar or coconut sugar
- 1/3 cup coconut oil or organic canola oil
- 2 very ripe bananas
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 3/8 cup water
Preparation

Preheat oven to 350 degrees. Grease a loaf pan with a little coconut oil and then line with parchment paper so that there is an overhang on both sides.
In a large mixing bowl, place the bananas and the solid coconut oil. Microwave for 30-40 seconds until the coconut oil is melted. Mash the bananas with a potato masher or fork.
Add the sugars and vanilla, water, and vinegar, and mix until combined.
Add the gluten free flour, baking soda, baking powder, and salt and mix together. The dough will be pretty thick.
Spoon into the prepared loaf pan*, and bake at 350 degrees for 40-45 minutes or until a toothpick inserted in the middle comes out clean.
Cool for 30 minutes in the pan, then remove from pan and cool on a cooling rack.
* I used a 9x5 loaf pan. If you use a narrower loaf pan, you may have to bake it longer to make sure it is done in the middle of the loaf.
